This is one of my all time favorite side dishes! It's perfect for summertime bbq's but i like it so much that i make it in the winter to!
How many potatoes you need depends on the amount of people you are serving.
For 2 servings you will need 2 large potatoes thinly sliced, Place them on a baking pan with tin foil and spray the pan. Than drizzle the potatoes with olive oil and lightly toss. Bake in the oven at 400 degrees for 30 - 40 minutes (depending on how thin they are they might need less time, so keep and eye on them). I usually turn mine half way threw, once they start getting crispy. When they are done take them out of the oven and sprinkle with some kosher salt and a small pinch or pepper, than sprinkle the chopped fresh basil leaves over them and toss!
