After a long some what stressful morning an afternoon in the park was just what I needed !
My sister in law picked me up and we headed to the park with the kiddos to have a picnic and enjoy some nature! Like I said in my last post i am totally an outdoorsy girl and I am love love loving all the greenery and beautiful parks here in Pennsylvania. This afternoon definitely goes down in the book as one my favorites. Loved spending time with family and enjoying the beautiful outdoors!
I absolutely love hiking and doing anything "outdoorsy" or nature related so every time i come back to the east coast one of my favorite things to do is go see the beautiful park and go on hikes! This past weekend we went up to the poconos for the weekend and got to go on this beautiful hike. Kyler loved it so much he didn't want to leave ! He is just like his mama, he is a little adventurer !
Hawaiian Chicken Kebabs:
1 Large Red Onion
4 Skinless, Boneless Chicken Breasts
2 Tbs soy sauce
2 Tbs light brown sugar
3 garlic cloves minced
1/4 cup ketchup
1/4 tsp red pepper flakes
1/3 cup pineapple juice
In a medium sized bowl mix together all ingredients for the marinade. Next cut the chicken, onion, peppers and pineapple into 1 inch chunks.
Place chicken and vegetable in separate bowls and poor marinade over each (make sure to save a little for basting). Let marinade for a few hours.
Cook rice according to package. Place chicken on skewers and grill chicken and vegetables. You can grill vegetables on a skewer as well or in a grill pan. Make sure to baste with remaining marinade while grilling. Once everything is cooked serve over rice.
